Ingredients
1 cup (237g) 4% cottage cheese, small curd
1/2 cup (71g) brown sugar alternative (erythritol or monk fruit blend)
2 cups (176g) superfine almond flour
1/2 cup (81g) sugar-free chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
2. In a bowl, mix cottage cheese and sweetener until smooth.
3. Add almond flour gradually; stir to form dough.
4. Fold in chocolate chips.
5. Chill dough for 30 minutes.
6. Scoop into balls, flatten slightly.
7. Bake for 10–12 mins until edges are golden.
8. Cool before serving. Store in airtight container.
Notes
For dairy-free, use unsweetened coconut yogurt.
Freeze for up to 2 months.
