– 1 cup cottage cheese (small curd, room temperature)
– 2 large ripe bananas, mashed (about 1 cup)
– 1 large egg, room temperature
– 1 teaspoon pure vanilla extract
– 1½ cups all-purpose flour
– ½ cup packed light brown sugar
– 1 teaspoon baking soda
– ½ teaspoon salt
– ¾ cup semi-sweet chocolate chips
– Optional: ½ teaspoon ground cinnamon
Instructions
1. Preheat oven to 350°F (175°C). Line 2 large baking sheets with parchment paper.
2. In a large mixing bowl, combine cottage cheese, mashed bananas, egg, and vanilla extract. Mix until smooth and well combined.
3. In a separate bowl, whisk together flour, brown sugar, baking soda, salt, and cinnamon (if using).
4. Add dry ingredients to wet ingredients and gently fold together until just combined. Don’t overmix.
5. Fold in chocolate chips until evenly distributed throughout the dough.
6. Using a cookie scoop or tablespoon, drop rounded portions of dough onto prepared baking sheets, spacing them 2 inches apart.
7. Bake for 12-15 minutes, or until edges are lightly golden but centers still appear soft.
8. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
